Oh my... these are red hens! This counted Cross stitch pattern - with an amusing variation of the original nursery rhyme surrounded by exquisite summer flowers - is stitched using  beautiful Color Variations floss from DMC.
Note: the pattern is also available with a French version of the nursery rhyme "Quand trois poules s'en vont aux champs"

The beaks of the hens are worked with a three-quarter stitch. Check out the related tutorial if you are not familiar with three quarter cross-stitches, they're real easy!
